White fine truffle

Tuber magnatum Pico

The outer part called “periudum” or “scorza” is smooth, pale ocher colour. Its inside called “Gleba” is brown or hazel coloured sometimes with red shades and very thin white veins. The smell is unique which gets very intense when it gets a full maturity. Size are variable. Pieces have different weight, from few grams up to 800/900 grams.

It is advisable to preserve the truffle in the fridge wrapped in absorbent paper closed in a glass container and to consume it within 4/5 days. This is undoubtedly the absolute king of all truffles therefore the most expensive one. The picking begins the last Sunday of September until the 31st of December.
